What Cut of Chicken Should I Use in this Copycat Recipe?

How To Make Copycat Panda Express Mushroom Chicken
- 2 pounds boneless skinless chicken thighs (or chicken breast)
- ⅓ cup cornstarch
- 5 tablespoons olive oil divided
- 1 cup mushrooms sliced
- 2 tablespoons soy sauce
- 1/2 lb. zucchini (about 2 zucchini, cut into ½ inch pieces)
Panda Express Ginger Soy Sauce
- 1 cup chicken broth
- ¼ cup soy sauce
- 2 tablespoons white cooking wine
- 2 tablespoons rice vinegar
- 2 teaspoons garlic crushed
- 2 teaspoons fresh ginger grated or finely chopped
- 1 teaspoon brown sugar
- 3 tablespoons cornstarch
- 1/4 cup water
Step 1: Chicken should be cut into bite-sized pieces, which you should then cover thoroughly with cornstarch.
Step 2: In a large skillet or wok, warm 3 tablespoons of olive oil over medium heat.
Step 3: One at a time, add chicken pieces to skillet, ensuring that they are sufficiently separated to avoid touching. Cook the chicken for about 5 to 6 minutes on each side, or until the outside is golden brown and fully done.
Step 4: Take the cooked chicken out of the pan, cover it, and set it aside. Clean the skillet. Return the skillet to the fire and add 2 tablespoons of oil.
Step 5: In the skillet, add the mushrooms and soy sauce, and cook for approximately a minute. Zucchini should be added and sautéed until barely cooked. Don’t overcook the zucchini; it should still be little crunchy.
Step 6: Re-add the chicken to the skillet and add the mild ginger soy sauce, stirring until the chicken and vegetables are thoroughly coated. Serve right away with rice or chow mein.
