What Cut of Chicken Should I Use in this Copycat Recipe?
When making mushroom chicken, Panda Express usually uses chicken legs. Dark meat is cheaper to buy and has more taste and fat.
But if you want a healthy version, choose bite-sized chunks of boneless chicken breasts or tenderloin. In this dish, I like to use chicken breasts, but my husband likes the darker meat.
But white meat can get a little dry, so don’t cook the chicken for too long. Before adding the sauce and liquid, sear the chicken in canola oil or sesame oil in a hot pan.
How To Make Copycat Panda Express Mushroom Chicken
Ingredients
- 2 pounds boneless skinless chicken thighs (or chicken breast)
- ⅓ cup cornstarch
- 5 tablespoons olive oil divided
- 1 cup mushrooms sliced
- 2 tablespoons soy sauce
- 1/2 lb. zucchini (about 2 zucchini, cut into ½ inch pieces)
Panda Express Ginger Soy Sauce
- 1 cup chicken broth
- ¼ cup soy sauce
- 2 tablespoons white cooking wine
- 2 tablespoons rice vinegar
- 2 teaspoons garlic crushed
- 2 teaspoons fresh ginger grated or finely chopped
- 1 teaspoon brown sugar
- 3 tablespoons cornstarch
- 1/4 cup water
Instructions
Step 1: Chicken should be cut into bite-sized pieces, which you should then cover thoroughly with cornstarch.
Step 2: In a large skillet or wok, warm 3 tablespoons of olive oil over medium heat.
Step 3: One at a time, add chicken pieces to skillet, ensuring that they are sufficiently separated to avoid touching. Cook the chicken for about 5 to 6 minutes on each side, or until the outside is golden brown and fully done.
Step 4: Take the cooked chicken out of the pan, cover it, and set it aside. Clean the skillet. Return the skillet to the fire and add 2 tablespoons of oil.
Step 5: In the skillet, add the mushrooms and soy sauce, and cook for approximately a minute. Zucchini should be added and sautéed until barely cooked. Don’t overcook the zucchini; it should still be little crunchy.
Step 6: Re-add the chicken to the skillet and add the mild ginger soy sauce, stirring until the chicken and vegetables are thoroughly coated. Serve right away with rice or chow mein.
Ginger Soy Sauce from Panda Express
Step 1: In a small saucepan, mix chicken broth, soy sauce, white wine, vinegar, garlic, ginger, and brown sugar. Stirring often, bring to a boil, and cook for about 5 minutes
Step 2: Make a slurry by mixing cornstarch and water together. Till the sauce thickens, gradually whisk in the mixture to the sauce. Not all of the cornstarch mixture may be required. Remove from the heat and reserve until needed.
Panda Express Mushroom Chicken Sauce
We put the Mushroom Chicken recipe and the String Bean Chicken Breast recipe next to each other and compared them. We found that the sauce in both of these recipes is exactly the same.
Even on the Panda website, it says that the chicken is “tossed in a light ginger soy sauce” for both of the recipes.
This recipe’s sauce might taste better because of the mushrooms, but the base sauce recipe is still the same. So make twice as much sauce and enjoy two of your favorite copied recipes at the same time.
Is Panda Express Mushroom Chicken Gluten Free?
Most of the foods at the real Panda Express restaurant are NOT gluten-free.
But if you make these meals at home, it’s VERY easy to make them gluten-free.
All you have to do for this recipe is use gluten-free soy sauce and make sure the broth you use is also gluten-free.
